Kothu Paratha

WHAT:
  • paratha cut in small pieces [if using frozen paratha, cook them and then cut]
  • oil
  • curry leaves
  • mustard seeds
  • green chillies
  • onion
  • ginger garlic paste
  • tomatoes
  • turmeric powder
  • red chili powder
  • chat  masala, kitchen king, pav bhaji masala [ or any other masala you have]
  • lemon juice
  • coriander leaves
  • eggs - 1 or 2
  • salt
  • yogurt mixed with chat masala and salt
HOW:
  • hit oil in skillet and add mustard seeds and curry leaves
  • add onion and green chillies
  • after onion is translucent add ginger garlic paste and let it cook for few minutes
  • add all masalas, salt. chili and turmeric powder
  • add tomatoes  and half of coriander leave and let it cook
  • add lemon juice 
  • add paratha pieces and mix well
  • add eggs and make sure to coat everything and cook until done
  • garnish with remaining coriander leaves
  • add some yogurt and enjoy

Beet, Fennel & Spinach with Whipped Feta Sandwich

January 13 2017, Friday Dinner WHAT Sourdough sliced bread butter 1-2 small Boiled beets thinly sliced 1/2 fennel bulb thinly sliced handful of  julienne spinach splash of balsamic vinegar salt and pepper per taste WHAT for Whipped Feta: 1 Jalapeno or Serrano or other green chili 1 clove of garlic Juice and zest of 1 lemon 2-3 tbsp olive oil 6-8 mint leaves 1/2 tsp dried dill (optional) 1 tablespoon olive oil Per taste pepper (if needed only) 1/2 cup feta cheese HOW: Mix sliced boiled beets, sliced fennel, julienne spinach and add splash of blasamic vinegar and black pepper and let it marinate for few minutes. Flame or oven roast green chili till the skin turns black, let it cool. Remove charred skin and slice the chili in half and discard seeds and vains. Updated July 6 2020, Monday Dinner WHAT: Oil (1 Tbsp) 2 Shallots / 7-8 Spring Onion white part (finely chopped) Garlic (10-12 cloves, finely chopped) Ginger (About 1 inch piece, finely chopped) Soyrizo (2-3 inch pack) Soft Tofu (1lb) Pixian Doubanjiang paste ( 3/4Tbsp corrected) Sambal (1tbsp) Laoganma Spicy chili crisp sauce (1 Tbsp) Laoganma Black bean chili sauce  (1 Tsp) Hoisin sauce (1 Tbsp) Sugar (1 Tbsp) Rice Vinegar (2 Tbsp) Soy Sauce (1.5 Tbsp/corrected) Corn Starch (2 Tsp) Veg.
